Sweet potatoes are a nutritious superfood, full of potassium and nutrients. Swap out mashed potatoes for this delicious, mashed, sweet potato recipe.
5 - 6 large sweet potatoes
1 ¾ cups coconut milk
½ tsp cumin powder
2 tbsps coconut oil
Celtic sea salt to taste
Scrub the potatoes to rid them of lingering dirt, and then peel and chop them into large chunks.
In a large pot, cover the sweet potatoes with water and bring to a boil. Allow the sweet potatoes to simmer for at least 15 minutes, or until they are very soft, then drain.
Mash the sweet potatoes to the desired consistency and then add the coconut milk, cumin, and grapeseed oil, mashing or pureeing these ingredients all together until fully combined.
Season with Celtic sea salt to taste and serve.
