Mushroom Spread

No need to eat chopped liver; try a plant-based spread made from mushrooms and fresh herbs instead.


2 slices of spelt bread

¼ yellow onion, cubes 

1/8 red pepper, cubes

1/8 green pepper, cubes

½ plum tomato, cubes

1 carton baby Bella mushrooms, quarters

1 sprig of thyme

3 basil leaves, fresh 

1 tbsp. cilantro, chopped

2 tbsp. mustard

1 ½ tbsp. grapeseed oil

Onion powder

Salt to taste

Coconut milk (optional)


  1. Place cut onions, mushrooms, red pepper and green pepper in a bowl with grapeseed oil, onion powder, salt and mustard. Mix well and lay on pan to be cook.

  2. Pour vegetable mix into pan and broil on high until browned.

  3. Once done browning, pour mix into food processor and process into a creamy consistency. Add coconut milk to make creamier. (optional)

  4. Toast bread, coat in spread.

  5. Top with fresh tomato, oregano and salt or Dulsi flakes.
