1 large sweet potato
2 garlic cloves
2 cups kale
Celtic sea salt
1. Preheat over to 400 degrees.
2. Bake sweet potato for 40 mins or until tender.
3. Add ½ tbsp olive oil to pan with garlic, kale and Celtic sea salt to taste.
4. Cook to desired texture, season with sea salt.
5. Warm wraps.
6. Plate tacos with kale, sweet potato, avocado and top with cilantro sauce.
