Zucchini Noodles + Pesto

INGREDIENTS:

8oz zucchini noodles

1 cup arugula

½ cup plum tomatoes diced 

PESTO SAUCE

2 cups fresh basil

½ cup walnuts

¼ cup extra virgin olive oil

Juice from 1 lemon 

1 garlic clove

1/8 tsp black pepper

Pinch of Celtic sea salt


INSTRUCTIONS:

1. Add all pesto ingredients into a food processor or blender and blend until nuts are in tiny pieces.

2. Chop tomatoes, rinse arugula and set aside. 

3. Plate zucchini noodles, pour pesto sauce over noodles. 

4. Fold in g arugula and tomatoes.
