Sweet Potato + Kale + Avocado Tacos

Great Taco Tuesday idea!


1 large sweet potato

2 garlic cloves

2 cups kale, chopped

1 avocado, sliced

Taco wrap of your choice

Grapeseed oil

Celtic sea salt


  1. Preheat over to 400 degrees.

  2. Bake sweet potato for until tender.

  3. Remove from over, let cool and chop into cubes.

  4. Add ½ tbsp grapeseed oil to pan with garlic, stir occasionally.

  5. Add in sweet potato cubes and Celtic sea and cook for 5 mins. Be sure to stir occasionally. Set aside.

  6. In a separate pan, steam kale, remove from heat when done and set aside.

  7. Warm wraps.

  8. Plate taco wrap, top with sweet potato, then kale, then avocado and top with with our Creamy Cilantro-Lime Sauce.
