This dressing is tangy, bright, a tad garlicky, and is richly in flavor thanks to the savoriness of sun-dried tomatoes.
Pair with your favorite salads, vegetables or Buddha bowl.
¼ cup sun-dried tomatoes
1 medium garlic clove
½ cup extra virgin olive oil
¼ cup apple cider vinegar
1 tbsp dijon mustard
3 tsps maple syrup
½ tsp sea salt
Glass jar (for storage)
Combine all ingredients in a blender and blend until smooth.
Add to your favorite salad, bowl or veggies.
Transfer the dressing to a lidded jar or container and store in the refrigerator for up to ten days.
