1 tbsp flax seed, 3 tbsp warm water (serves as egg replacement)
1 cup spelt flour
1 cup non-dairy milk
1 tbsp apple cider vinegar
2 tsp baking powder
¼ tsp baking soda
¼ tsp salt
1 tbsp coconut oil for the pan
1 tsp vanilla extract
¼ cup crushed pumpkin seeds/nuts for topping
Maple syrup or preserves for topping
Optional: add superfoods to batter for added benefits - matcha, turmeric, chia seeds, blueberries, etc.
Mix flaxseed with warm water and mix until you achieve a yolk like consistency.
Mix dry ingredients together.
Mix wet ingredients together.
Add wet ingredients to dry ingredients.
Heat coconut oil in pan and pour batter to desired size.
Cook until brown on both sides.
Serve and top with maple syrup/preserves, pumpkins seeds/nuts, banana and/or other desired toppings.
