Raw Zucchini Noodles + Meatless Meatballs

An Italian favorite with a pant-based twist!


8oz zucchini zoodles 

1 tbsp chopped basil


1 cup walnuts 

1 date, soaked  

¼ cup finely diced celery 

¼ cup finely diced red bell pepper 

¼ cup finely diced flat leaf parsley 

¼ cup grated carrots 

¼ cup grated zucchini  

1 tbsp extra virgin olive oil  

1 tbsp sun-dried tomato 

1 tsp fine chopped onion 

1 tsp lemon juice 

1 tsp Celtic salt 


1 cup chopped tomatoes  

½ cup sun-dried tomato  

½ cup red bell pepper 

½ cup firmly packed basil 

1 tbsp extra virgin olive oil  

1 tbsp fresh lemon juice 

1 tbsp fine chopped onion 

1 garlic clove 

1 date, soaked  

¼ tsp Celtic salt 


  1. Combine ingredients for marinara sauce in food processor until creamy. Set aside. 

  2.  Combine “meatball” ingredients in food processor until mixture is moldable.  

  3. Form balls.  Set aside.

  4. Cook marinara sauce and add meatballs, if preferred.

  5. Assemble raw (or steamed) zucchini. Top with “meatballs”, marinara sauce and fresh basil.
