Raw Alfredo + Zucchini Noodles

An Italian favorite with a pant-based twist!


8oz zucchini noodles (steamed or raw)

1 cup cashews 

½ cup water

1 garlic clove

1 tbsp chopped basil

1 tbsp fresh lemon juice

1/8 cup chopped yellow onion

½ tsp Celtic sea salt

1 cup arugula

Salt and pepper to taste


  1. Add cashews in a bowl with boil by water. Soak for 1 hour

  2. Drain and rinse

  3. Add drained cashews, water, garlic, lemon juice, onion and Celtic sea salt into a food processor or blender

  4. Assemble plate, zucchini noodles (steamed or raw), arugula, basil and raw Alfredo sauce (warm if preferred)
