These quinoa patties are delicious, and packed with protein and nutrients! Serve over a salad or prepare as a burger.
2 ½ cups cooks quinoa
4 tbsp ground flax seed
½ tsp Celtic sea salt
1 cup vegetable broth
2/3 cup fresh chives
1 cup chopped kale
1 yellow onion, diced
½ avocado mashed with fork
6 cloves garlic
¼ tsp cayenne pepper
1 cup breadcrumbs
1 tbsp grapeseed oil
1 tbsp extra virgin olive oil
In a large bowl combine flax seeds and 1 cup boiling vegetable broth. Mix until consistency is egg -like.
Add quinoa and salt to mix.
Add chives, onion, kale, ½ mashed avocado, garlic and cayenne pepper.
Add bread crumbs and allow to sit for 1 minute (if necessary, add more broth or breadcrumbs to achieve the desired texture).
Add grapeseed oil to medium pan over medium/low heat add patties and cook for 8-10 mins. Flip and cook for another 8-10 mins.
Assemble patty on buns, romaine lettuce or salad.
Top with favorite sauce and veggies.
