1 1/3 cups Brazil nuts
1/4 cup key lime juice
1 tsp sea salt
¼ cup spring water
Allow Brazil nuts to (option 1) soak in a bowl w/ warm water for about an 1 hour. Set aside. Or (option 2) allow Brazil nuts to soak in room temperature water for 6-8 hours.
Drain + rinse nuts.
Preheat oven to 300 degrees.
Place nuts in food processor w/ key lime juice, Celtic sea salt + water.
Blend until smooth.
Twist out excess water w/ cheese cloth.
Remove ball from cheese cloth + place tray covered w/ parchment paper.
Shape "cheese" ball.
Sprinkle smoked paprika over Brazil nut cheese for a smoky taste; cover with pesto sauce or some of your favorite herbs. (I added 1/2 tsp dried thyme, 1 tsp dried smoked paprika + 1/4 tsp dried tarragon into the mix of this block.)
Place in the oven for 30 mins.
Remove from oven. Allow to cool. Serve with favorite veggies or crackers!
