Brazil Nut Cheese

Who said you had to give up cheese? Raw, vegan and alkaline cheese you'll surely love!


Ingredients

1 1/3 cups Brazil nuts

1/4 cup key lime juice

1 tsp sea salt

¼ cup spring water

Cheese cloth

Food processor/blender

Parchment paper

Instructions

  1. Allow Brazil nuts to (option 1) soak in a bowl w/ warm water for about an 1 hour. Set aside. Or (option 2) allow Brazil nuts to soak in room temperature water for 6-8 hours.

  2. Drain + rinse nuts.

  3. Preheat oven to 300 degrees.

  4. Place nuts in food processor w/ key lime juice, Celtic sea salt + water.

  5. Blend until smooth.

  6. Twist out excess water w/ cheese cloth.

  7. Remove ball from cheese cloth + place tray covered w/ parchment paper.

  8. Shape "cheese" ball.

  9. Sprinkle smoked paprika over Brazil nut cheese for a smoky taste; cover with pesto sauce or some of your favorite herbs. (I added 1/2 tsp dried thyme, 1 tsp dried smoked paprika + 1/4 tsp dried tarragon into the mix of this block.)

  10. Place in the oven for 30 mins.

  11. Remove from oven. Allow to cool. Serve with favorite veggies or crackers!
