1 1/3 cups Brazil nuts
1/4 cup key lime juice
1 tsp sea salt
¼ cup spring water
Preheat oven 300 degrees.
Add Brazil nuts in a bowl with boil by water. Soak for 1 hour. Set aside.
Drain and rinse nuts.
Place nuts in food processor with lime juice, salt and water.
Blend until smooth.
Twist out excess water with cheese cloth.
Shape "cheese" ball.
Place in the oven for 30 mins.
Remove from oven.
Sprinkle smoked paprika over Brazil nut cheese for a smoky taste, cover with pesto sauce or your favorite herbs.
Let cool and serve with your favorite crackers.
